I feel confident in saying this Nesco Gardenmaster is a better quality product than the Excalibur 9 tray, both of which I have used.I first tried the Excalibur and quickly realized it took too long and was too cumbersome to be effective and needed a new thermostat after just three weeks.I found myself babysitting the unit, switching trays and drying only during the day when I could turn it off manually.The 9 tray I had did not have an automatic timer and was just a pain in the neck.I sold it on Ebay after two months.I ventured out into the world of dehydrating again after two long years of resentment.I tried the Nesco and was so happy I did.The digital controls offer exact results every time, the automatic shut-off allow you to dry at nightwithout waking to adjust trays or check results.
The capacity is huge with the add on trays offered and the powerful fan dries the bottom tray equally as fast as the top.The top mounted motor keeps drips from causing a clean-up nightmare and the quality of food is excellent.I've dried fruits, vegetables, made pounds and pounds of jerkey and have experimented with some raw food "baking" which all turned out perfect.
I love the Nesco Gardenmaster and suggest you seriously consider it whether a novice or pro.If you are considering an Excalibur, I highly recommend the Nesco as I found it performed substantially better than the Ex,has design features to make your drying easy and fun, and costs about $50.00 less.

Somewhere in my life - I think in Boy Scouts - I developed a taste for beef jerky. Years later, in grad school, I realized I could make it at home, as well as dry fruits and vegetables for snacks, with a magical machine called a dehydrator. At the time I picked up a cheap machine - $24, I think - from Wal-Mart. I was able to make some ground beef jerky, dry some fruits and make my own ground red pepper from peppers I grew in pots in the porch. Soon, the dehydrator lid was cracked, the trays warped, other things got my attention, and forming jerky strips from ground beef was tedious without a jerky gun, so the machine got put up for a number of years.

Six or seven years later, I'm in my career and new house. The interest in making jerky and drying foods is renewed, bolstered by an interest in drying foods for camping. I tried to use the old machine. It's only temperature control was a variable vent on the lid - but you still didn't know what temperature you were drying at. (which can be the difference between safe jerky, and jerky that will make you quite sick) I'm probably lucky I never got sick. The airflow was also quite inconsistent. One end of an item would be overdried, while the other end wasn't dried at all. These things would just ruin entire batches of food. Additionally, there were no drying sheets available for it to make leathers ("fruit roll-ups," but you can also dry things like spaghetti sauce.) I decided to get a better dehydrator.

I researched dehydrators, and found several books and online reviews pointing to the American Harvest (NESCO) Gardenmaster. The FD-1018 and FD-1010 are the same machine, but the FD-1018 includes more trays, more leather sheets, more mesh sheets (a finer mesh than the tray which allows drying of smaller objects, like chopped veggies, without falling through the trays), and a book on drying.

The most important features of this dehydrator are the temperature control (dry veggies at 135-145F, meats at 145-155F), and the fact that it is carefully designed for uniform airflow on every sheet. This last advantage cannot be emphasized enough. With the Gardenmaster, I don't have to worry about moving items around and shuffling trays for consistent results. It's actually pretty amazing how well it works!

The Gardenmaster has been getting a workout making jerkies, fruit leathers, and dehydrating vegetables for taking to camp.

As for choosing the FD-1010 or FD-1018, if you're investing this kind of money, I'd highly recommend going to the FD-1018. The price difference more than made up for the cost of purchasing the additional trays, additional accessories and book separately (at least when I purchased it). You will find that you can EASILY fill a half dozen trays. (I used 5 trays the other night to dry just 2 lbs of ground beef jerky.) You don't want to overcrowd foods. You also get enough leather sheets for all of the trays and enough screens for all of the trays. It's frustrating to find that you have enough trays for your drying task, but only have 2 or 3 screens or sheets. The book HOW TO FRY FOODS by Delong is also included. I intend to cover that in an individual review, but it is a worthwhile book and much more substantial than the directions you'd otherwise receive with a dehydrator.

If you don't want to spend this kind of money until you see how much you'll use it, you may want to try the smaller NESCO FD-50 Snackmaster, which also has temperature control, although it only goes to 145F, which is the minimum for meat. As I said, NESCO seems to know the secret of uniform airflow, and I expect this knowledge to be extended to the FD-50.

Don't try to skimp too much on a dehydrator, or you will pay for ruined food, wasted time and frustration. If it is in your price range, you will no be disappoined with the FD-1018 Gardenmaster.

UPDATE: If you're upgrading to this from a less powerful model, beware that it may dry MUCH faster!I've ruined a couple of batches of jerky - turned REALLY leathery - before I realized I was OVERdrying!Can't leave it drying jerky overnight.

I have been dehydrating food for years and have been disappointed with the quality of the less expensive products (the trays melt and deform with time etc).Not wanting to keep filling landfills, I decided to invest in a product with a decent warranty...the L'equip Dehydrator has a 12 year warranty.It is fabulous!The tempature control feature is nice.And, probably most amazingly, when I had a question, I called customer service, got a REAL person who knew what they were talking about!

It makes great beef jerky, dried eggplant, carrots, fruit etc.. I make sure the lid is closed (no holes) and it takes about 8 hours for three racks of food to dry. Powerful, quiet. Ordered with Marys complete dehydrator cookbook, great book for people just getting started and those who didn't know eggsand milk (and other cool stuff) can be dehydrated. Looking forward to healthy snacks for some time to come. I love the trick of dipping fruit and veggies in o.j. or lemon juice so they don't shrivel or get brown from oxidation.working on making leather or fruit roll ups with applesauce and yogurt, cant wait! great kitchen tool, to use extra food from dinner and snacks. I bought this dehydrator kit for my son as a gift. I found it so easy to use that I have been using it myself.

The actual drying unit is pretty straight forward.It swirls air inside the drying chamber to dry the meat product.It does this in an efficient and predictable manner. It is efficient because I know that almost every area of the inside chamber is covered by the airflow.It is predictable because of the use of the jerky gun. The jerky gun makes the meat the same size.Because of this the cooking times stay the same.

When I start, I prepare the meat as per the instructions.You are directed to take hamburger and add their dry mix.Combine the ingredients, and insert the meat in the jerky gun.The jerky comes out the same size every time.Add those pieces to the tray, and in two hours you have jerky. There is a small fan that makes a fairly substantial noise.I move the appliance to another room to avoid the sound.

I have learned that following the instructions will give you jerky that can be kept for some time with out spoiling.The objective here is to remove as much as the fat from the meat as possible.The fat is what will cause the meat to spoil quickly.

I have experimented with other ways to prepare the meat.I have bought roasts when they go on sale.I used a slicer once.I didn't like that way because the meat would not come out thin enough. If you have a very nice slicer this way might work.

I also tried cutting the meat with a knife.That was a pain too.It was a lot of work but the jerky came out more like what you might see in the stores, chunky.I don't think this type of jerky will stay fresh as long. There will be a substantial amount of fat left in the meat even after drying.

The best alternative preparation is to ask the butcher if he will grind the meat for you. I buy the roast on sale.Then the butcher grinds it for me. I think the fat percentage is quite low.The hamburger with the lowest fat percentage I can find is around 12%.It costs 30% more than my method.

I take the hamburger and add ingredients from recipes that I have found on the internet.I let the ingredients marinate the meat.I use the jerky gun to make the pieces.I use this type of jerky as a snack for around the house.The jerky I make with the dry prepackaged mix is best for backpacking.This is because it is much drier and hence less fat.The jerky will not spoil as quick.

Overall, I found the dryer easy to use.The jerky gun is a welcome addition to the preparation.Good Luck

This dehydrator is top notch for the money. I read the reviews, making note of people wanting timers, time tables in the instruction manual being incorrect and one that states they didn't like the hole in the middle, huh? That's where the fan blows hot air downward. As far as a timer and the manual being off on time tables, let me point out you don't need a timer and you don't want to rely on one. This dehydrator doesn't take days to finish, so if you have to leave the house or go to bed..unplug it. Use it when you can check on the progress. It's not a Crock Pot. As far as the time tables being off, take into consideration that people cut their foods into different thickness and a quarter inch differs from eye to eye. Humidity levels are different place to place and so many different factors are in play. So the time tables are only a guide and not the law. That's why you DON'T want to use a timer. This product can also be used WITHOUT electricity. Take the top motor off, cover the top of the trays with clear or black plastic and set in the sun. It's a great product and a good buy,

I love this thing!
We got it to try and make beef jerky, the one thing we hadn's tried yet.
But it's so easy to operate, never imagined we'd get so much use out of this gadget - kids are eating the dried fruits up by the pounds, when before the apples just stayed in the vase for days and days. I've tried rising the dough and making croutons. Works wonderfully, cleans up in a second. Highly recommend.

I was in the market for a dehydrator mainly for making beef jerky, as I am a jerky lover. I visited frequent local chains such as Walmart (in 4 different cities). All stores seemed to be out of the base Nesco FD-61 model. I reluctantly ordered this kit from [...] as it contained all the 'extras.'

When it arrived I opened the box to see:

o) Nesco American Harvest FD-61 Food Dehydrator. One base, 4 large trays, and a power head rated at 500 watts, variable climate control (~95-155 temp range for various things). Most of the accessories that came with the kit were located inside the trays. Made in the USA! The dehydrator is rated as whisper quiet and is rather quiet. The emitting hum is close to quiet window-mounted AC unit. The unit is very stable and the construction is excellent. This unit really does get warm.

o) One extra tray (totalling 5 trays). Keep in mind that although this unit is expandable to 12 trays, you may have to begin rotating lower trays to the top during the drying process. With the included 5 trays it doesn't seem necessary, though I do trade the top tray with the bottom tray after the first hour during jerky drying.

o) A Jerky Kit. The Kit included a jerky gun, 3 tips, and 5 cures and 5 seasonings. The Jerky gun holds almost 3/4lb ground beef jerky mix. The tips included extrude a strip shape, narrow beef stick shape, and wide beef stick shape. The seasonings and cures are for ground beef as well. For each one pound of ground beef, you mix in one packet of cure and one packet of seasoning. The gun is great and works well. My only complaint is that that when the plunger is at the end (expelled all beef mix), there is some jerky left in the tip. This is especially true to the narrow and wide beef stick tips as they hold almost a full piece left.

o) Two Clean-a-Screens. These are screens with narrower holes for placement on a tray to prevent smaller food from falling as well as preventing sticky food (bananas, pineapple) from being hard to release once it's done drying. I have not used these yet though I have seen them used and they work well.

o) Two fruit "roll-up" trays. These are trays that cover the existing trays to prevent anything from falling below. The material is on the softer side so food release will be easy once drying is complete. I haven't used them for fruit rolls yet, though I hear they work great for that. I do, however, use them on the bottom tray to catch grease and other 'junk' when I dehydrate my beef.

o) Recipe/Guide. This book has the usual instructions and care handling. It also includes many recipes and instructions, tips and suggestions for preparing fruits, vegetables, meats (i.e. jerky), herbs, desserts, hobbies/crafts, and more. There are many cool recipes in here along with neat crafts such as wreaths that I plan to use.

Overall, this is an excellent kit and well worth the money. All items separate cost quite a bit. Don't forget, it's also made in the USA!

Nesco Jerky Kit BJX-5 / B001795P3K

I purchased this for use with my Nesco FD-75PR 700-Watt Food Dehydrator, but despite the glowing reviews on Amazon, I personally did not find this jerky gun very easy to use.

To start with, if you just load this jerky gun with ground beef right out of the package, you will find that the gun clogs instantly - there isn't enough pressure to force the ground beef through. If you soak the ground beef first in liquid (like, for example, soy sauce) and load it into the gun and press the trigger... the liquid will be forced out, the ground beef will stay in the gun, and another clog will result. In fact, the *only* way to get the ground beef to come out of the tube in strips is to puree it to a liquid beforehand in a food processor, blender, or electric mixing bowl.

Once you've actually got pureed ground beef, you have to actually extrude the jerky from the gun. The major problem here is that there are only two ways to push material out of the tube: either you press the button for short, controlled bursts, or you hold the button down with one hand and push the presser bar until you've gotten the length you like. Pressing the button for short bursts is completely useless, however, since the gun spits out about an inch of jerky (if that) so shudderingly that it immediately disconnects from the gun - so if you want a jerky STRIP instead of tiny jerky bites, you're going to have to hold the button down and use the presser.

The problem with the presser method is three-fold. First, you'd better be pretty strong to push the presser successfully, and I mean *very* strong, and you'd better have a steady hand - if you tremble at all, the jerky strip tears off from the gun. Second, you'd better have pretty long arms because the presser literally doubles the length of the tube. And third - and this is the biggest problem - you need three arms. You have to have one hand on the button at all times in order to work the presser manually and of course you have to use a second hand to operate the presser. If you have a circular dehydrator (and most people do), you're going to have to get a second person to help and turn the plate as you extrude jerky. You can't just extrude some and then use your presser hand to turn the plate and keep going, because that slight motion will break the jerky strip.

Consequently, jerky with this kit is a big production at our house - I puree the meat and stuff it into the jerky gun, my fiance operates the plastic gun while I turn the dehydrator plate to create the necessary long 'jerky spiral' that dries so nicely and breaks into strips. And then, of course, there's the clean-up which takes awhile: not only are these several pieces to clean, but the screwed on top doesn't come off easily after the jerky juices have leached into it during use.

After several uses with this kit, I kind of dread making ground beef jerky, just because it's so tricky to do with this. I wonder if I should have gotten a more expensive machine - maybe one that would extrude in a strip automatically, and just let me worry about positioning and turning? It really shouldn't have to take 3-4 hands to operate a jerky gun. In the meantime, I'm sticking to 'strip steak jerky' just because it's so much easier.

A side note about the seasonings - they are VERY strong. We used them at the given ratio and were completely overwhelmed; even halving the ratio only helped a little. And they're not even really that great - the strongest taste is of MSG and salt. And if you use soy sauce to liquefy the meat, you really don't need MORE salt. I'd recommend making your own seasoning from an online recipe or something because these just didn't taste good at all, in my opinion.

I've used virtually every dehydrator on the market and even a few home-made versions.Trust me when I say that this dehydrator is the best you can get for the money.

The round tower-type dehydrators are inexpensive for a good reason: they aren't worth it.
-The trays are flimsy and crack too easily.
-The holes on these trays are too big to use with herbs or diced foods, so you must use the mesh inserts.
-You only have about 1/2" of space between trays, so you cannot dry bulky items--like flowers or granola.
-When it comes to fruit leather, the only thing more inefficient than the round shape is the hole in the middle.Yes, I know they come with fruit leather trays, but have you ever tried to store fruit leather pealed off of the tray and rolled up?A shredded mess to begin with and a sticky mess once they've stored for a while.
-With the motor on the bottom any food or juices that fall through the cracks shortens the life of the machine.
-The drying process in these tower-types is not uniform--the bottom trays dry quicker than the top trays, the center dries quicker than the edges.
-Some models have only recently started adding temp controls.Still, it does little good because there is more heat on the bottom than the top.
-The motor is loud--I had one model I had to run on the porch because it was so loud.
The two round models I bought died within a year and a half of use.

The next best dehydrator on the market is the L'Eqip.It is much quieter, comes with a healthy 10yr warranty and has temperature controls. But it is a hybrid with many of the faults of the round models and few of the benefits of the square-shaped Excalibur.It still has a hole in the middle.It still dries unevenly.It has deeper trays but you still can't dry flowers.It still has a motor on the bottom.I have a friend who dried berries in her L'Equip.They leaked on the motor and it died the first summer of use.Now granted, the folks at L'Equip stood by their machine and replaced it for her with no hassle, but how many times do you want your summer-time dehydrating held up while you wait for your replacement to come?

The Excalibur is perfect for anyone who is serious about dehydrating.Here are the features that I like:
-Heat source and fan are in the back, forcing air to distribute evenly throughout the chamber.Other than the way you place the food, there is no reason for uneven drying spots.
-Love the timer.I can set it and leave.It'll turn off automatically whether or not I'm there.That means 'round the clock drying during the height of your summer harvest.Put the food in when you go to bed, wake up to dried food and put another batch in.
-Temp control lets you choose low heats for herbs and flowers, higher temps for fruits and jerky.
-Love the square trays.For fruit leather I line the trays with plastic wrap and spread the fruit puree out.When it's dry I cut the leather into 2" wide strips, roll them up and secure with the tail end of the plastic wrap.The plastic peels off easily when it's time to eat.
-BIG trays--you can pack a LOT of food into this.This is especially important at the height of the summer harvest when there's a non-stop stream of food that needs drying.(This is also the one single thing that is in my negative column--the trays don't fit flat in my kitchen sink, making them a little hard to wash.I solve this by washing them in my outdoor garden sink--old fashioned tubs on a stand.Since I like the big trays, I really shouldn't complain.)
-Mesh liner on all trays.I can dry herbs, diced onions and finely chopped fruits without having it fall to trays below.No food cross-contamination means I can dehydrate more than one thing at a time.
-Removable trays.If I have bulky items--flowers, herbs, granola, etc--I can just remove every other tray and have another 1/2" or more room.
-Makes a great proofing box for sourdough.Also good for culturing yogurt, esp if you like to make it in larger containers.For both sourdough and yogurt, make sure it is covered so that the moving air doesn't dry it out.
-10 yr warranty.I've had mine for almost 15 yrs and it's still going strong.Every year the money I save on herbs alone pays for what it originally cost me.That means this machine has paid for itself 15 times over.

If you're at all serious about dehydrating, don't waste your money like I did--get the best from the get go.That's the Excalibur.

I bought the previous model of this dehydrator.I seriously would not even give this machine 1 star, but there is no lower rating.I bought mine a year ago, used it once, and the bottom heating element burned every single tray that I rotated to the bottom, which you have to do in order to get anywhere.The entire machine was worthless within a week of me owning it.I did eat the beef jerky, but that was the most expensive jerky I will ever make!I called immediately to complain, talked to a guy named Saul, who said the unit must be defective, DUH! and he would send me a new unit and a return authorization.I have gotten neither, I am just out the money.I have called back, faxed, mailed, waited on hold, and finally decided that Ronco products are CRAP.I will never give him or his company another cent.Buyers please research your purchases, I see from other reviews that I am not the only one with a complaint.Buy a different machine!

I had a Ronco dehydrator and needed to move up.I work all week and could only prepare foods to dry on the weekend.We get an organic farm share each week and my family was having trouble eating and processing it all before the next batch arrived.Once I got the Excalibur 9 tray, I was able to get all of my food dried with NO LOSS OF BATCHES. This thing has a thermostat and fan instead of relying on convection alone, so it works much more quickly. This dehydrator is great. I've had the unit for almost a month now. So far I've dehydrated 20 pounds of "eye of round" for jerky. The recipe I used is at Recipezaar (can't post URL), recipe number 161262 (modified a bit to suite my taste, like I added about 1 tsp of onion powder and cut the liquid smoke about 25%). In fact I just did 10 of the 20 pounds yesterday. I've also dehydrated cantaloupe, kiwi slices, strawberries, grapes (come out as plump and juicy raisins), limes, oranges (those were more of an experiment), banana slices and watermelon (now that was interesting... sweet as candy), but back to the review.

I also got two sets of the Add-a-tray (two trays per package). It dries with all 8 trays just fine. I do rotate the trays about half way through, but I'm not sure I would really have to. The instructions say that the trays are top shelf dishwasher safe, but that would limit my dishwasher to only two trays per load, so I take my top rack out of the dishwasher and stand the trays vertically in the lower rack. I can get all eight trays and the base into the dishwasher at once. I figured that my water heater is only set to 125 degrees and I dry jerky at 165, so the trays shouldn't have any problem. Just make sure that you turn off any internal water heating the dishwasher my have and make sure that you turn off heated drying (use air dry). I just wait for the washer to stop, take out the trays and shake them off. Stack them, put on the power head and run it at 125 for 30 minutes. All nice, clean and dry.

Now for the hint that Nesco doesn't want me to share :) for fruit, you really need to use the Clean Screens, but at 8 bucks for a pair, you'll spend $32.00 (plus any shipping) to get enough for all 8 trays. I went to my local craft store (you know the one owned by Michael) and bought 16 sheets of plastic embroidery mesh (7 square mesh) that were 14" X 10" (the ones you would use to make those awful square Kleenex box covers). Take two sheets per tray and cut them out yourself with kitchen shears. Put them together butted up on the long side and then cut the perimeter to fit the tray and cut out the hole (1/2 of the hole in each sheet where they are butted up) for the center and then lay the two pieces into the tray. The sheets were $0.33 each, so 16 sheets only cost $5.28 and a bit of time to cut them out. Didn't really need them for the cantaloupe, but I'd still be cleaning kiwi and bananas off the trays if I hadn't used them. I throw them into the dishwasher with the trays and just run the whole load at once. All in all, this was a great buy and I'm glad I got it.

So, I've spent a few more months with my dry friend... that's a pun... :-)

This unit is now $49. I bought it and am happy with it at $70. Now, there is no reason not to give it a try!

About 3 months ago, I bought the jerky squeeze gun. I got it at BiMart in Oregon for $2 more than you can get it here at Amazon (the instant gratification thing). Available here. Search for Nesco BJX-5 American Harvest Jumbo Jerky Works Kit. My daughter and I make the round "slim-jim" type jerky every couple of months (about 4 lbs of 96% lean ground beef each time). The squeeze gun is as easy as using a caulking gun. Actually even better since you really don't need to be concerned about the aesthetic appearance of the final product... I mean we're taking jerky here and you can't eat caulk. I use the Nesco spicy mix with additional black pepper, powered garlic and cayenne pepper (lot's of cayenne pepper).

We've also, since buying it, done some fruit leather. Just used a jar of store bought apple sauce with a bit of added cinnamon. Next time, I think we'll put a bit of Splenda(r) in it just to "sweeten" the final product a bit. Tip... even using processed apple sauce, we put it through the blender to completely break it down into a slurry.

My "home made" clean screens are still preforming perfectly. Hope this update helps others.

I had been researching dehydrators for months and finally decided on this one.I am happy I did.I have dried veggies, fruits, made jerky and fruit leathers so far.It is easy to use, has great recipes and works well.It is nice to be able to give the kids snacks that are not full of sugars and things no one can pronounce.I only wish it had a timer.I will probably use a regular timer and plug it into that.
